Black rice is often referred to as forbidden rice, which is a name that originated from ancient China when it was reserved for royalty. Both terms describe the same range of rice types known for their dark color and high nutritional value.

Cooking Black Rice

Stovetop Method

  1. Rinse 1 cup of black rice thoroughly.
  2. Soak for 30–60 minutes (optional).
  3. In a pot, combine the rice with 2¼ cups of water and a pinch of salt.
  4. Bring to a boil, then reduce heat and simmer for 30–35 minutes.
  5. Let it rest for 5–10 minutes before serving.

Instant Pot Method

  1. Rinse 1 cup of black rice.
  2. Add to the Instant Pot with 1 cup of water.
  3. Cook on high pressure for 18 minutes.
  4. Allow for a natural release for 10 minutes.

  • Avoid overcooking to prevent a gummy texture.
  • Pair with roasted vegetables or herbs for added flavor.
